Green Beans

Browned butter and walnuts make ordinary Green Beans taste extraordinary. Even people who don't normally like green beans will like this recipe.

If you want to go really gourmet, use high-end sea salt, such as Maldon sea salt. It costs about $6.50 for a box, and it takes this Green Beans Recipe to a whole new level.


Ingredients

* 1 pound fresh green beans, washed and trimmed
* 4 Tbsp. butter
* 1/2 cup chopped walnuts
* 1/2 tsp. kosher salt


Preparation

1. Place washed and trimmed green beans in a gallon-size zip-lock plastic bag. Poke holes in the top with a knife to allow steam to escape.

2. Place the bag in the microwave with the holes facing up. Heat on high 3-6 minutes, until green beans are crisp-tender. Do not overcook. Check at 3 minutes.

3. Heat butter in a medium skillet over medium heat. Once melted, turn heat down to medium-low and let butter simmer until it turns brown. Be careful! Butter burns easily, so you will want to watch it, turning heat down if necessary. When the butter starts to give off a nutty aroma, it's ready.

4. Add walnuts to the butter and let cook a minute or two. Add green beans and salt. Toss until well-coated. Cook another minute. Serve immediately.

Makes 4-6 servings.

Green Salad with Apples and Nuts

This Green Salad Recipe starts with bagged lettuce and has all the flavors of a fruit and nut salad that kids really like -- chopped apples, hazelnuts, cheese. Sweet and Sour Meatballs or Vegetable Lasagna make perfect partners for this Apples Salad Recipe.


Ingredients

* 1 16 oz. bag pre-washed salad greens (such as romaine, radicchio, butter lettuce)
* 1 large Granny Smith apple, peeled and diced
* 3/4 cup chopped hazelnuts
* 2 oz. gruyere or swiss cheese, diced
* 1/2 bottle raspberry vinaigrette dressing


Preparation

1. Wash and dry salad greens. Place in a large salad bowl.

2. Add chopped apple, hazelnuts and cheese. Toss well.

3. Just before serving, toss with raspberry vinaigrette dressing.

Serves 4-6.

Apple Pecan Coleslaw

Coleslaw Recipe aren't normally worth talking about. Indeed, the average cole slaw can be pretty bland. Not this one. This Apple Pecan Coleslaw Recipe gets added zip from tart granny smith apples, a honey sour cream dressing and crunchy pecans.


Ingredients

For the Dressing:
* 1/2 cup low-fat or non-fat sour cream
* 2 Tbsp. Dijon mustard
* 1 Tbsp. honey
* zest and juice of one orange (or Meyer lemon)
* 1/2 tsp. - 2 tsp. hot sauce (depending on how hot you like it)
* kosher salt and pepper, to taste

For the Coleslaw:
* 1 16 oz. package shredded cole slaw mix (cabbage)
* 2 medium Granny Smith apples, diced
* 2 radishes
* 1 large carrot
* 1/2 cup chopped pecans


Preparation

1. In a large serving bowl, whisk together the sour cream, Dijon mustard, honey, orange zest, orange juice and hot sauce.

2. Season with salt and pepper to taste.

3. Dump cole slaw mix right on top of dressing mixture.

4. Add diced apples.

5. With a food chopper, food processor, or knife, mince the radishes and carrot. Add to slaw.

6. Just before serving, add pecans and toss well.
