Seven Layer Salad Recipe

Seven Layer Salad

This Seven Layer Salad is the perfect addition to any party, potluck or holiday celebration. It looks attractive, tastes great, and best of all, you can make this layer salad in advance. Feel free to vary the ingredients, but be sure to use a tall glass bowl for this Seven Layer Salad Recipe.

Prep Time: 20 minutes
Total Time: 20 minutes


Ingredients

* 6 slices bacon
* 1 head iceberg lettuce, shredded or chopped
* 1 yellow onion, diced
* 3/4 cup diced celery
* 1 medium red pepper, seeded and diced
* 1 10 oz. package frozen peas, thawed
* 1-1/4 cups mayonnaise
* 2 Tbsp. granulated sugar
* 1 cup shredded cheddar cheese


Preparation

1. Fry bacon. Drain on paper towels, and set aside.

2. Place lettuce in a tall glass bowl.

3. Scatter onions over lettuce in an even layer.

4. Top with layers of celery, red pepper and frozen peas.

5. Whisk together mayonnaise and sugar. Spread evenly over peas, like icing.

6. Top with shredded cheese. Crumble bacon over cheese.

7. Cover with plastic wrap and refrigerate 30 minutes or up to 12 hours.

8. When ready to serve, toss salad.

Mexican Pasta Salad Recipe

Mexican Pasta Salad

This Mexican Pasta Salad Recipe is perfect for picnics, barbecues and potlucks. Jicama adds crunch to this Mexican pasta salad, but if you can't find it at the supermarket, just leave it out. You can make this cold pasta salad in advance and just add the dressing right before serving.

Cook Time: 11 minutes
Total Time: 26 minutes
Yield: 6 Servings, Mexican Pasta Salad


Ingredients

* 8 oz. short pasta (macaroni, rotini, shells)
* 1 14.5 oz. can black beans, rinsed and drained
* 1 cup frozen corn
* 1 small red bell pepper, seeded and diced
* 1 cup shredded Mexican cheese blend (or cheddar cheese)
* 1 cup chopped jicama
* 1 cup packed chopped lettuce (optional)

Mexican Pasta Salad Dressing
* 1 cup mayonnaise
* 2 Tbsp. Tomato Salsa
* 1 Tbsp. mild chili powder


Preparation

1. Cook pasta according to package directions. Drain.

2. Toss pasta with black beans, corn, chopped red pepper, cheese, jicama and lettuce. If making this pasta salad in advance, stop here, and refrigerate until just before serving.

3. Make dressing: Whisk together mayonnaise, salsa and chili powder. Toss dressing with pasta salad.

Lemon Bars Recipe

Lemon Bars

I like to make these Lemon Bars for bake sales, potlucks, picnics and spring and summer celebrations. There is just something about the sweet-tart taste of lemon that really tickles the taste buds.

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 60 minutes


Ingredients

* 1 cup butter, softened to room temperature
* 1/2 cup powdered sugar
* 2 cups all-purpose flour

For the Filling

* 5 large eggs
* 1-3/4 cups granulated sugar
* 3/4 cup freshly-squeezed lemon juice
* zest of 2 lemons
* 1/2 cup all-purpose flour
* 1/3 cup powdered sugar


Preparation

1. Preheat oven to 350 degrees F. Grease a 9 x 13 baking dish.

2. With an electric mixer, cream butter and sugar together. Add flour to mixture just until it comes together as a dough. Turn out onto a floured board and knead a few times. Press into bottom and slightly up the sides of the prepared pan.

3. Bake 15-20 minutes until golden brown. Let crust cool on a wire rack.

4. For the filling, beat eggs, sugar, lemon juice and lemon zest together. Whisk in flour until smooth. Pour into crust. Bake 30 minutes or until filling is set.

5. Let lemon bars cool to room temperature. Dust with powdered sugar before serving.

Makes 36 lemon bars.
